Our Environmental Initiatives

Wastewater treatment

As a company that uses a lot of water for our cheese recipes and to keep the plant clean, we have a superb wastewater treatment system.

Thanks to this system, we can clean all the wastewater and return the water to the local watercourses.

CO2 compressors

In 2012, we installed two CO2 compressors to reduce our dependence on propane. These compressors produce cold water which is used to cool our aging rooms, our production area and cool whey to slow down fermentation inside the silo so it stays fresher for longer.

The hot water produced by these compressors is used to pasteurize the milk, then sent to a storage silo where it can be used in all our cleaning and other equipment.

Sustainable Packaging

In our store, we have also replaced plastic bags with paper bags at the checkout and we are gradually switching to compostable trays. The paper we use to wrap our semi-hard cheeses has been replaced by a more suitable paper that preserves the cheese's freshness and is recyclable.

We now have an industrial-sized recycling garbage can just for cardboard, which ensures that it is properly recycled and reduces the amount of waste going to landfill.

2026 Modernization - Vision

By 2026, we plan to replace the current system with newer, more efficient machines, reducing our dependence on propane by at least 90%.

    The tour guide at nearby Fort Lennox recommended this fromagerie, and we loved it! We grabbed some bread and cookies to go along with our cheeses, then had a picnic lunch on their table across the street. We had a raclette, green peppercorn cheese, and a goat milk brie.
