Mr. Fritz Kaiser, Master cheese maker and leading pioneer in the creation of Canadian "Raclette", specialises in the production of firm and semi-firm, washed rind cheese.  
   

Situated in Noyan, an agricultural centre in the Richelieu valley, 45 minutes south of Montreal. Fromagerie Fritz Kaiser, benefits from the rich soil and quality local milk production.
He began crafting his cheeses here in 1981 according to traditions learnt in his original home of Switzerland. Over the years he has developed a large assortment of cheeses and presided over the growth of his fromagerie to accommodate demand.
